Ingredients
- 4 tablespoons chia seeds
- 1 cup of plant-based milk (almond, coconut, oat or other milk of your choice)
- 1/2 cup coconut milk
- 1/4 cup honey or other natural sweetener (optional)
- 1 teaspoon vanilla extract
- 1 ripe mango, diced
- 1/4 cup fresh shredded coconut
Preparation method
- In a glass container or airtight jar, combine the chia seeds, plant-based milk, coconut milk, honey (if using), and vanilla extract. Stir until all ingredients are well combined.
- Cover the container and refrigerate for at least 4 hours, or overnight, so that the chia seeds absorb the liquid and form a creamy pudding.
- When the pudding is ready, add the mango cubes and grated coconut on top. Serve immediately and enjoy!
