Detailed Preparation Method
Dough Preparation: In a food processor, grind the cooked chickpeas until you get a smooth paste. Add the olive oil, salt and turmeric, mixing until incorporated. Gradually add the rice flour until you get a dough that doesn't stick to your hands. Store in the refrigerator.
Filling Preparation: In a pan, heat the coconut oil and sauté the onion and garlic until golden. Add the tomato, hearts of palm, peas and olives, sautéing for another 5 minutes. Add the sweet cassava starch, stirring quickly, then add the coconut milk to create a cream. Season with salt, pepper and chopped parsley. Let cool.
Pie Assembly: Divide the prepared dough into two parts. Using a rolling pin, roll out the first part of the dough and cover the bottom of a greased pie pan. Spread the filling evenly over the dough. Roll out the second part of the dough and cover the filling, sealing the edges well.
