- 1 cup plant-based cream (coconut, almond, soy, choose your favorite!)
- 1 tablespoon of tomato sauce, to enhance the flavor and give a special touch
- 1 teaspoon sweet paprika, for a smoky and irresistible touch
- 1/2 teaspoon ground cumin, for a strong, exotic flavor
- 1/4 teaspoon ground black pepper, to adjust the spiciness to your taste
- Salt to taste, to season perfectly
- Chopped green onions for garnish (optional, but makes the dish even more beautiful)
Preparation method:
In just 30 minutes, you'll have a creamy chickpea stroganoff ready to delight:
- In a large saucepan, heat the olive oil and vegan butter over medium heat. Let the onion brown until soft and translucent, releasing all its irresistible aroma.
- Add the chopped garlic and sauté for a few more minutes, until it releases its unique aroma.
- If you chose to use mushrooms, this is the time to add them to the pan. Let them sauté for a few minutes until they are soft and golden.
- Add the cooked and drained chickpeas to the pan. Mix well to coat all the chickpeas in the delicious stew you prepared.
- Pour the diced peeled tomatoes into the pan and mix gently. Let cook for a few minutes, allowing the flavors to combine and the tomatoes to release their natural sweetness.
- Time to add creaminess and flavor to your stroganoff! Add the vegetable cream, tomato sauce, sweet paprika, ground cumin, freshly ground black pepper, and salt to taste. Stir well to incorporate all the seasonings into the sauce.
- Let the chickpea stroganoff cook for about 10 minutes over medium heat, stirring occasionally, to allow the flavors to intensify and the sauce to become creamy.

- After 10 minutes, turn off the heat and check the seasoning. Adjust the salt, pepper and other seasonings according to your taste.
