Ingredients:
Mass:
- 1 cup of fine rolled oats
- 1/2 cup almond flour
- 2 tablespoons coconut oil (or other healthy oil)
- 1 egg
- 1 tablespoon honey (or natural sweetener to taste)
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla essence
- 1 pinch of salt
Filling:
- 3 medium apples (preferably fuji or gala)
- 1 tablespoon lemon juice
- 1/4 cup water
- 1 tablespoon ground cinnamon
- 1 tablespoon honey (or natural sweetener)
- 1 teaspoon cornstarch (dissolved in 2 tablespoons of water)

- Prepare the oven and the pan:
- Preheat the oven to 180°C.
- Grease a pie pan (20cm in diameter) with coconut oil or line with baking paper.
- Mix the dough ingredients:
- In a large bowl, mix the rolled oats, the almond flour, the coconut oil, the egg, the honey, the cinnamon, the vanilla essence and the salt. Stir until a homogeneous mass is formed.
- Line the pan:
- Once the dough is ready, press it into the bottom and sides of the pan, creating an even base for the pie.
- Pre-bake the dough:
- Place in a preheated oven and bake for 10 minutes or until the dough begins to brown slightly. Remove from the oven and set aside.
Filling:
- Prepare the apples:
- Wash, peel and cut the apples into thin slices.
- Place them in a bowl and sprinkle with the lemon juice to prevent them from oxidizing (darkening).
- Cook the apples:
- In a saucepan, add the sliced apples, the water, the cinnamon and the honey. Cook over medium heat for about 5 minutes, until the apples are soft but still hold their shape.
- Thicken the filling:
- Dissolve the corn starch in water and add to apple mixture, stirring until filling thickens slightly (about 2 minutes). Turn off heat and let cool.
Assembly:
- Fill the dough:
- Pour the apple filling over the pre-baked crust, spreading it evenly.
- Finalization:
- If you like, sprinkle a little bit of cinnamon powder on top to add more flavor.
- Bake the pie:
- Put the pie back in the oven and bake for 20 to 25 minutes, or until the crust is golden brown and the filling is bubbly.
- Let it cool:
- Remove from the oven and let the pie cool for at least 10 minutes before serving.

- Store the pie in the refrigerator for up to 5 days in a closed container.
