- 1 cup grated coconut sugar free
- 1/2 cup chopped almonds
- 1/4 cup molasses
- 2 tablespoons coconut oil
- 1/4 cup of protein vanilla flavored powder
- 1/4 cup almond milk (or other plant-based milk)
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions:
- Preheat the oven to 180°C.
- Line a baking sheet with parchment paper and set aside.
- In a large bowl, mix together the shredded coconut and chopped almonds.
- In a small saucepan, heat the molasses and coconut oil over low heat until completely melted and well combined.
- Add the protein powder to the molasses and coconut oil mixture, stirring until the mixture is smooth.
- Remove the pan from the heat and add the almond milk and vanilla extract, mixing well.
- Pour the liquid mixture over the dry ingredients (coconut and almonds) and mix until everything is well incorporated.
- Spread the mixture evenly into the prepared baking dish and press down firmly with a spatula so that it is compact.
- Bake for about 15-20 minutes, or until the edges are golden brown.
- Remove from oven and let cool completely on baking sheet before cutting into squares or bars.
- Store in an airtight container to maintain freshness.
