Ingredients:

  • 1 cup grated coconut sugar free
  • 1/2 cup chopped almonds
  • 1/4 cup molasses
  • 2 tablespoons coconut oil
  • 1/4 cup of protein vanilla flavored powder
  • 1/4 cup almond milk (or other plant-based milk)
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. Preheat the oven to 180°C.
  2. Line a baking sheet with parchment paper and set aside.
  3. In a large bowl, mix together the shredded coconut and chopped almonds.
  4. In a small saucepan, heat the molasses and coconut oil over low heat until completely melted and well combined.
  5. Add the protein powder to the molasses and coconut oil mixture, stirring until the mixture is smooth.
  6. Remove the pan from the heat and add the almond milk and vanilla extract, mixing well.
  7. Pour the liquid mixture over the dry ingredients (coconut and almonds) and mix until everything is well incorporated.
  8. Spread the mixture evenly into the prepared baking dish and press down firmly with a spatula so that it is compact.
  9. Bake for about 15-20 minutes, or until the edges are golden brown.
  10. Remove from oven and let cool completely on baking sheet before cutting into squares or bars.
  11. Store in an airtight container to maintain freshness.
