Recipe history
The idea for the Healthy Seafood Rice came about during a trip to the coast. While strolling through the local fish market, I saw an incredible variety of fresh seafood – shrimp, squid, mussels – and I couldn’t resist bringing some of each home.
I wanted to recreate that fresh, light flavor, but with a healthier touch, and I decided to replace the traditional white rice with brown rice, to add more fiber and nutrients to the dish.
With a few pinches of paprika and saffron to enhance the colors and a touch of fresh lemon to finish, this Healthy Seafood Rice was born, full of flavor and perfect for those days when we want a light but striking meal.
