To prepare this delicious soup, you will need:
Ingredients:
- 2 cups of green lentil tea
- 4 cups of water
- 1 medium onion, chopped
- 2 cloves of minced garlic
- 1 medium carrot, chopped
- 1 stalk of chopped celery
- 1 medium tomato, chopped (optional)
- 2 tablespoons extra virgin olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 bay leaves
- Chopped fresh herbs to finish (optional): parsley, chives, cilantro, basil
Preparation method:
- Wash the lentils thoroughly and leave them to soak for at least 30 minutes. This step is important to reduce cooking time and prevent the lentils from becoming indigestible.
- In a large saucepan, heat the olive oil over medium heat.
- Sauté the onion and garlic until soft and translucent.
- Add the carrots, celery and tomatoes (if using) and sauté for a few more minutes, until the vegetables are soft and starting to brown.
- Drain the lentils and add them to the pan.
- Cover with water, add salt, black pepper and bay leaves.
- Bring to a boil, then reduce the heat, cover the pan and let cook for about 30 minutes, or until the lentils are tender. Cooking time may vary depending on the type of lentils used.
- Remove from heat and, if desired, blend part of the soup in a blender to obtain a creamier consistency. This step is optional and will depend on your personal preference. If you like thicker soups, you can blend the entire soup. If you prefer a more rustic texture, blend only half or a third of the soup.
- Serve hot, topped with chopped fresh herbs and a drizzle of extra virgin olive oil. Fresh herbs add a touch of flavor and freshness to the soup. You can use your favorites, such as parsley, chives, cilantro or basil.
