Ingredients

for the dough:

  • 1 cup almond flour
  • 1/2 cup grated parmesan cheese
  • 1 egg
  • 2 tablespoons melted butter (or coconut oil)
  • Salt to taste

for the filling:

  • 1 cup cooked and chopped broccoli
  • 1/2 cup grated mozzarella cheese
  • 3 eggs
  • 1/2 cup fresh cream (or lactose-free cream)
  • 1 clove of minced garlic
  • 1/4 chopped onion
  • Salt and black pepper to taste
  • Nutmeg to taste

Preparation method:

1. Preparing the dough:

  1. In a bowl, mix the almond flour, grated parmesan cheese, egg, melted butter and salt. Mix well until a homogeneous dough forms.
  2. Line the bottom and sides of a quiche pan (preferably with a removable bottom) with this dough. Use your hands to distribute it evenly.
  3. Bake in a preheated oven at 180ºC for about 10 minutes or until the edges begin to brown slightly. Remove and set aside.

2. Preparing the filling:

  1. In a frying pan, sauté the onion and garlic until golden.
  2. Add the chopped broccoli and sauté for a few more minutes. Set aside.
  3. In a bowl, beat the eggs, add the cream and season with salt, pepper and nutmeg. Mix well.
  4. Add the grated mozzarella cheese and the sautéed broccoli to the egg mixture. Stir well so that all the ingredients are incorporated.

3. Assembly and finishing:

  1. Pour the filling over the pre-baked dough.
  2. Bake in a preheated oven at 180ºC for about 25-30 minutes or until the filling is firm and lightly golden on top.
  3. Remove from the oven and let cool slightly before serving.
