Ingredients:

For the dough:

  • 1 cup (120g) almond flour
  • 2 tablespoons coconut flour
  • 1 egg
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the sauce:

  • 1 tablespoon olive oil
  • 1 clove of minced garlic
  • 1/2 chopped onion
  • 1 can (400g) of peeled tomatoes
  • 1 teaspoon oregano
  • Salt and black pepper to taste

For the filling (optional):

  • 200g grated mozzarella
  • Fresh chopped tomato
  • Fresh basil
  • Black olives
  • Oregano
  • chopped pepper
  • Cooked broccoli
  • Shredded chicken
  • Catupiry

Preparation method:

1. Prepare the dough:

  • In a bowl, mix the almond flour, coconut flour, salt and black pepper.
  • Add the egg and olive oil and mix until a smooth dough forms. If the dough is too dry, add a little water little by little until it reaches the right consistency.
  • Transfer the dough to a floured surface and knead for a few minutes until smooth and elastic.
  • Roll out the dough with a rolling pin into a circle the size of your pizza pan.
  • Place the dough in the greased and floured pan and press the edges to form a ring.
  • Prick the bottom of the dough with a fork to prevent it from rising too much during baking.
  • Preheat the oven to 200°C.
  • Place the dough in the oven to pre-bake for 10 minutes.

2. Prepare the sauce:

  • While the dough is pre-baking, heat the olive oil in a saucepan over medium heat.
  • Add the chopped garlic and onion and sauté until soft.
  • Add the peeled tomatoes, oregano, salt and black pepper.
  • Cook for 15 minutes, stirring occasionally, until the sauce thickens.

3. Assemble the pizza:

  • Remove the dough from the oven and spread the sauce over it.
  • Add the filling of your choice.
  • Return the pizza to the oven and bake for another 15-20 minutes, or until the crust is golden brown and the cheese is melted.
  • Remove from the oven and let rest for a few minutes before serving.
