Ingredients:
For the dough:
- 1 cup (120g) almond flour
- 2 tablespoons coconut flour
- 1 egg
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the sauce:
- 1 tablespoon olive oil
- 1 clove of minced garlic
- 1/2 chopped onion
- 1 can (400g) of peeled tomatoes
- 1 teaspoon oregano
- Salt and black pepper to taste
For the filling (optional):
- 200g grated mozzarella
- Fresh chopped tomato
- Fresh basil
- Black olives
- Oregano
- chopped pepper
- Cooked broccoli
- Shredded chicken
- Catupiry
Preparation method:
1. Prepare the dough:
- In a bowl, mix the almond flour, coconut flour, salt and black pepper.
- Add the egg and olive oil and mix until a smooth dough forms. If the dough is too dry, add a little water little by little until it reaches the right consistency.
- Transfer the dough to a floured surface and knead for a few minutes until smooth and elastic.
- Roll out the dough with a rolling pin into a circle the size of your pizza pan.
- Place the dough in the greased and floured pan and press the edges to form a ring.
- Prick the bottom of the dough with a fork to prevent it from rising too much during baking.
- Preheat the oven to 200°C.
- Place the dough in the oven to pre-bake for 10 minutes.
2. Prepare the sauce:
- While the dough is pre-baking, heat the olive oil in a saucepan over medium heat.
- Add the chopped garlic and onion and sauté until soft.
- Add the peeled tomatoes, oregano, salt and black pepper.
- Cook for 15 minutes, stirring occasionally, until the sauce thickens.
3. Assemble the pizza:
- Remove the dough from the oven and spread the sauce over it.
- Add the filling of your choice.
- Return the pizza to the oven and bake for another 15-20 minutes, or until the crust is golden brown and the cheese is melted.
- Remove from the oven and let rest for a few minutes before serving.
