Ingredients:

  • 1 cup of quinoa grains
  • 2 cups coconut milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1 tablespoon honey or agave (optional)
  • 1/2 cup chopped fresh fruit (mango, banana, strawberry, kiwi, etc.)
  • 2 tablespoons grated coconut
  • 2 tablespoons flaked almonds (optional)

Preparation method:

  1. Wash the quinoa well under running water until the water runs clear.
  2. In a medium saucepan, combine the rinsed quinoa, coconut milk, water and salt.
  3. Bring to a boil over high heat, then reduce heat to low, cover pan, and simmer for 15 minutes, or until quinoa is tender and liquid is absorbed.
  4. Remove from heat and let rest for 5 minutes with the pan covered.
  5. Meanwhile, prepare the fruit by cutting it into cubes or into the desired shape.
  6. In a bowl, add the cooked quinoa and stir with a fork to loosen the grains.
  7. Add honey or agave (if using), chopped fruit, grated coconut and flaked almonds (if desired).
  8. Mix gently to incorporate the ingredients and serve immediately.
