Ingredients
Basis:
- 1 cup (tea) of rolled oats
- 1/2 cup (tea) of almond flour
- 2 tablespoons melted coconut oil
- 1 tablespoon of honey or natural sweetener to taste
- 1 pinch of cinnamon
Filling:
- 300g plain Greek yogurt sugar free
- 200g light cream cheese
- 1 teaspoon vanilla essence
- 2 tablespoons of honey or natural sweetener
- 1 sachet of unflavored gelatin (12g)
- 3 tablespoons of water to hydrate the gelatin
Red Fruit Topping:
- 200g of red fruits (strawberry, raspberry, blackberry and blueberry)
- 1 tablespoon of chia
- 1 tablespoon of honey or natural sweetener
Preparation Method
Basis:
- Mix the oats, almond flour, coconut oil, honey and cinnamon until you get a smooth dough.
- Line the bottom of a springform pan (20 cm in diameter) with the mixture, pressing down well.
- Bake in a preheated oven at 180°C for 10 minutes or until lightly golden. Remove and let cool.
Filling:
- Hydrate the colorless gelatin with 3 tablespoons of water and microwave for 10 seconds to dissolve.
- In a blender, blend the Greek yogurt, cream cheese, vanilla and honey until creamy.
- Add the dissolved gelatin and beat again until incorporated.
- Pour the filling over the already cold base and refrigerate for at least 2 hours to set.
Coverage:
- In a pan, heat the red fruits with the honey over low heat, stirring until they begin to release liquid.
- Turn off the heat, add the chia and stir well. Let it cool.
- After the cheesecake has set, spread the berry topping on top.
