Ingredients:
- 2 cans of canned tuna (drained)
- 1 ripe avocado, mashed
- 1/4 cup light mayonnaise (optional)
- 2 tablespoons fresh lemon juice
- 1/4 cup chopped red onion
- 1 chopped tomato
- 1 tablespoon chopped parsley
- Salt and black pepper to taste
- 4 slices of wholemeal bread
Preparation method:
- Preparing the filling: In a medium bowl, combine the tuna, avocado, mayonnaise (if using), lemon juice, red onion, tomato, parsley, salt, and black pepper. Mash well with a fork until smooth.
- Assembling the sandwich: Spread the tuna mixture generously on two slices of whole wheat bread.
- Closing with a flourish: Top with the other two slices of bread and cut the sandwich in half (diagonally, for a special touch).
