Ingredients for Brown Rice Cake
(Quantity for 12 units)
- 2 cups of cooked brown rice
- 1/2 cup of oatmeal
- 1/4 cup of crushed golden flaxseed
- 1/4 cup of quinoa flakes
- 1/2 cup of chopped dried fruit (apricots, raisins, cranberries, etc.)
- 1/4 cup of chopped nuts (almonds, walnuts, Brazil nuts, etc.)
- 1/4 cup chopped green herbs (parsley, chives, coriander)
- 2 cloves of minced garlic
- 1 small onion, chopped
- 1 this
- Salt and pepper to taste
- Extra virgin olive oil for grilling
Preparation method
- In a food processor, grind the cooked brown rice until you get a fine crumble.
- Add the oat flour, ground golden flaxseed, quinoa flakes, chopped dried fruit, chopped nuts, chopped chives, chopped garlic and chopped onion. Process until all ingredients are well mixed.
- Transfer the dough to a bowl and add the egg, salt and pepper to taste. Mix well until you get a smooth dough.
- If the dough is too dry, add a little water little by little until it reaches the ideal consistency for shaping the dumplings.
- With damp hands, shape the dumplings into the desired shape (round, oval, etc.).
- Heat some extra virgin olive oil in a non-stick frying pan.
- Grill the dumplings over medium heat, turning them occasionally, until golden brown on all sides.
- Serve hot and enjoy!
