Ingredients for Brown Rice Cake

(Quantity for 12 units)

  • 2 cups of cooked brown rice
  • 1/2 cup of oatmeal
  • 1/4 cup of crushed golden flaxseed
  • 1/4 cup of quinoa flakes
  • 1/2 cup of chopped dried fruit (apricots, raisins, cranberries, etc.)
  • 1/4 cup of chopped nuts (almonds, walnuts, Brazil nuts, etc.)
  • 1/4 cup chopped green herbs (parsley, chives, coriander)
  • 2 cloves of minced garlic
  • 1 small onion, chopped
  • 1 this
  • Salt and pepper to taste
  • Extra virgin olive oil for grilling

Preparation method

  1. In a food processor, grind the cooked brown rice until you get a fine crumble.
  2. Add the oat flour, ground golden flaxseed, quinoa flakes, chopped dried fruit, chopped nuts, chopped chives, chopped garlic and chopped onion. Process until all ingredients are well mixed.
  3. Transfer the dough to a bowl and add the egg, salt and pepper to taste. Mix well until you get a smooth dough.
  4. If the dough is too dry, add a little water little by little until it reaches the ideal consistency for shaping the dumplings.
  5. With damp hands, shape the dumplings into the desired shape (round, oval, etc.).
  6. Heat some extra virgin olive oil in a non-stick frying pan.
  7. Grill the dumplings over medium heat, turning them occasionally, until golden brown on all sides.
  8. Serve hot and enjoy!
