  • Juice of 1 orange
  • Zest of 1 orange

Detailed Preparation Method

1. Preparing the dough:

  1. In a bowl, mix together the oat flour, almond flour, coconut sugar and salt.
  2. Add the melted coconut oil and mix until it forms a moist crumbly mixture.
  3. Add the ice water, one spoon at a time, until a smooth dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.

2. Preparing the Filling:

  1. In a small saucepan, combine the apricots, dates, raisins, orange juice, and molasses. Cook over low heat for 5 minutes.
  2. Add the spices (cinnamon, nutmeg and ginger) and mix well.
  3. Remove from heat, stir in orange zest and chopped walnuts. Set aside.

3. Assembling the Cake:

  1. Roll out the dough on a floured surface and transfer to a tart pan with a removable bottom, pressing the sides firmly.
  2. Prick the bottom of the dough with a fork and bake in a preheated oven at 180°C for 10 minutes.
  3. Remove from the oven, spread the filling evenly over the dough and return to the oven for another 10 minutes.

4. Finalization:

  1. Allow to cool before unmolding.
  2. Decorate with whole dried fruit, orange zest and a touch of ground cinnamon.
