1. Preparing the dough:

- Add the melted coconut oil and mix until it forms a moist crumbly mixture.
- Add the ice water, one spoon at a time, until a smooth dough forms.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
2. Preparing the Filling:
- In a small saucepan, combine the apricots, dates, raisins, orange juice, and molasses. Cook over low heat for 5 minutes.
- Add the spices (cinnamon, nutmeg and ginger) and mix well.
- Remove from heat, stir in orange zest and chopped walnuts. Set aside.
3. Assembling the Cake:
- Roll out the dough on a floured surface and transfer to a tart pan with a removable bottom, pressing the sides firmly.
