Fit Banana Cake: Sugar Free and Gluten Free


Ingredients:

  • 3 ripe bananas, mashed
  • 2 cups rolled oats
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 1 tablespoon baking powder
  • 1 pinch of salt
  • Optional: 1/2 cup raisins, chopped walnuts, or chopped dark chocolate

Coverage (optional):

  • 1 sliced banana
  • Raisins
  • Chopped nuts or chestnuts

Preparation method:

  1. Preheat the oven to 180°C. Grease and flour a baking tin. cake average.
  2. In a blender, beat the bananas, oats, eggs, oil and water until you obtain a homogeneous mixture.
  3. In a bowl, mix the yeast and salt. Add to the blender mixture and mix gently with a whisk.
  4. Add the raisins, nuts or chopped chocolate (if desired) and mix.
  5. Pour the batter into the prepared pan and bake for about 30 minutes, or until golden brown.
  6. To check if the cake is ready, do the toothpick test: insert a toothpick into the center of the cake. If it comes out clean, the cake is ready. If it comes out dirty with raw batter, bake for a few more minutes.
  7. Remove the cake from the oven and let it cool a little before unmolding.
  8. Decorate with sliced banana, raisins, chopped walnuts or chestnuts (optional).
  9. Serve and enjoy!

Tips:

  • Use very ripe bananas for a sweeter flavor and softer texture.
  • If desired, add other ingredients to the dough, such as ground cinnamon, ground ginger, or cocoa powder.
  • For a special touch, decorate the cake with light whipped cream, sugar-free chocolate syrup or fresh fruit.
  • This cake can be stored at room temperature for up to 3 days.
