Ingredients:
For the base:
- 1 cup whole oat flour
- 1/2 cup almond flour
- 1/4 cup coconut sugar
- 1/4 cup cold vegan butter, cut into cubes
- 1 pinch of salt
For the cream:
- 2 cups plain Greek yogurt
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
For the red fruits:
- 2 cups fresh berries (strawberries, raspberries, blueberries, etc.)
- 1/4 cup coconut sugar
Preparation method:
- Preheat the oven to 180°C. Line a 9-inch pie pan with parchment paper.
- Prepare the base: In a food processor, combine the oat flour, almond flour, coconut sugar, and salt. Pulse until the mixture is fine and smooth. Add the cold vegan butter and pulse again until the mixture resembles wet sand. Press the dough evenly into the bottom of the pie pan.
- Bake the base for 15 minutes. Allow to cool completely before adding the cream.
- Prepare the cream: In a blender, combine the Greek yogurt, honey, vanilla extract, and ground cinnamon. Process until smooth and creamy.
- Pour the cream over the cooled pie crust. Spread evenly.
- Decorate with fresh red fruits. Sprinkle with additional coconut sugar if desired.
- Refrigerate for at least 2 hours, or overnight. This will allow the cream to set and the flavors to blend.
- Serve chilled and enjoy!
