Ingredients:
- 1 cup of quinoa grains
- 2 cups coconut milk
- 1/2 cup water
- 1/4 teaspoon salt
- 1 tablespoon honey or agave (optional)
- 1/2 cup chopped fresh fruit (mango, banana, strawberry, kiwi, etc.)
- 2 tablespoons grated coconut
- 2 tablespoons flaked almonds (optional)
Preparation method:
- Wash the quinoa well under running water until the water runs clear.
- In a medium saucepan, combine the rinsed quinoa, coconut milk, water and salt.
- Bring to a boil over high heat, then reduce heat to low, cover pan, and simmer for 15 minutes, or until quinoa is tender and liquid is absorbed.
- Remove from heat and let rest for 5 minutes with the pan covered.
- Meanwhile, prepare the fruit by cutting it into cubes or into the desired shape.
- In a bowl, add the cooked quinoa and stir with a fork to loosen the grains.
- Add honey or agave (if using), chopped fruit, grated coconut and flaked almonds (if desired).
- Mix gently to incorporate the ingredients and serve immediately.
