  • 1 cup red lentils
  • 2 cups of water
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion, chopped
  • 2 cloves of minced garlic
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper powder (optional)
  • 1 can of chopped peeled tomatoes
  • 1 cup coconut milk
  • Salt and black pepper to taste
  • Chopped fresh cilantro for garnish (optional)

A Step-by-Step Culinary Journey:

  1. Wash the red lentils well and soak them for at least 30 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Sauté the chopped onion until soft and translucent.
  3. Add the chopped garlic and grated ginger and sauté for another minute, releasing the aromas.
  4. Add the curry powder, cumin powder, turmeric powder and chili powder (if using). Cook for 1 more minute, stirring constantly, to release the aromas of the spices.

  6. Pour the coconut milk into the pan and season with salt and black pepper to taste. Cook for another 5 minutes, stirring occasionally.
  7. Remove from heat and garnish with chopped fresh cilantro (optional). Serve hot with basmati rice or quinoa.
