1 tablespoon sesame oil


1 chopped onion


2 cloves of minced garlic


1 carrot, cut into cubes


1 cup chopped mushrooms (shitake or shimeji)


1 tablespoon grated ginger


1/4 cup soy sauce


4 cups of water


1/4 cup miso paste


1 package firm tofu, cut into cubes


Chopped chives to finish

Preparation method

    In a pan, heat the sesame oil and sauté the onion and garlic until golden.

    Add the carrots, mushrooms, ginger and soy sauce. Sauté for about 5 minutes.

    Add water and let it boil for 10 minutes.

    In a bowl, mix the miso paste with some of the soup stock until completely dissolved. Add this mixture to the pan and stir well.

    Finally, add the tofu and let it cook for another 5 minutes.
